Well, we can only call 'panettone' that baked confectionery product with soft dough and a round base that is obtained through the natural fermentation of sourdough. Panettone must have a characteristically cracked and cut upper crust; it has a soft structure with elongated alveolation and retains the typical aroma of sourdough leavening.
