Did you know that the name 'colomba' is recognised according to a specific production specification? Well, we can only call 'colomba' that soft dough baked confectionery product with an irregular ovoid shape similar to that of a dove that is obtained through the natural fermentation of sourdough. The dove must have a superior glaze and a decoration made of sugar grains and at least 2% almonds; it has a soft structure with elongated alveolation and must be produced in Italy to be defined as such!
